Scrambled eggs with mushrooms recipe

Hello my fellow foodies!

I was making my breakfast last week and decided to take pictures of it. It`s one of my favorite breakfasts at the moment (I am obsessed with mushrooms!) and thought to share it with others.

It`s very easy and quick to make (takes less than 10 min) and is healthy.. Did I mentioned incredibly tasty??!

You`ll need:

  • Mushrooms - I used about 80g, but 50g is enough for just the egg (I used the extra 30 for the side)
  • 1 egg (or more)
  • Salt
  • Grape oil 
For the side: 
  • Pickles
  • Cucumber
  • Raw cauliflower
  • Any other vegetable you like! :)




You don`t have to do this step, but I like to mix the egg before pouring it in the pan, as I am not a very skilled cook and when I don`t mix it in advance I sometimes don`t manage to do it in the pan haha So it`s just a lot more easier (and wayy less stressful haha) this way :)

Oh, and I also added salt to it so I don`t have to do it later.



How to make it:

1) Heath the pan and pour a little bit of oil in it

2) Put the mushrooms in the pan and roast them until they get a slightly brownish color.

On this particular day I decided that I wanted to eat some mushrooms separately from egg, so when they were cooked I just poured a little bit of them (probably about 30g/ 1/3 of the original amount) on my plate





3) Pour the egg into the pan and keep stirring it until it`s nice and golden color, and it`s all mixed together!

4) Now all you`ve gotta do is put it on your plate, add your veggies and eat it! :D

On this particular day I decided on pickles, cucumber and cauliflower, but it really just depends on what I have laying around in the fridge. Sometimes it`s radishes, cabbage, broccoli, lettuce, carrots, ... Whatever you have/like!
